Vegan Lasagna recipe

Following is a delicious Vegan Lasagna Recipe. Enjoy!


To begin with, you will need to find a good pan, a 9" x 13" pan will do just fine.

Next you will need a cheese sauce recipe.

Vegan Cheese Sauce Recipe

If you have a good blender (preferably a Vitamix) place the water and cashews in first, then put in the rest of the ingredients. This healthy cheese sauce is wonderful for lasagna (which we will be using it for) pizza, burritos, or tacos.

*Nutritional Yeast: "Definition: Yellow in color and with a nutty cheesy flavor, nutritional yeast is an inactive yeast that is a favorite amongst many vegans because of its unique flavor and similarity to cheese when added to foods. Sprinkle some on hot popcorn or garlic bread, or add a generous spoonful to a stir fry or pasta sauce. Nutritional yeast is also the only reliable food source of vitamin B12, so if you’re vegan, it’s a good idea to add some to your food regularly. Nutritional yeast can be found in the bulk or supplement section of your health food store. You can look for either nutritional yeast flakes or powder, but be sure you don’t get brewer’s yeast by mistake, as its quite similar in appearance." - vegetarian.about.com

Now that the cheese sauce is ready, you will need to make a vegan ricotta recipe for the filler.

Vegan Stedda Ricotta Tofu Recipe.

Blend 1/2 of the tofu with the olive oil and nutmeg. Add the rest of the ingredients, then crumble the remaining tofu on top and mix in.

Now you are ready to make your lasagna!

Vegan Lasagna Recipe
You will need the following ingredients:

Turn the oven on bake to 375 degrees.


To begin, pour a layer of tomato sauce across the pan and spread it out with a spoon. Next, place noodles in the pan (I used a larger pan, hence the extra layers of noodles).

 


Next, add another layer of tomato sauce, then sprinkle 1/2 of the ricotta tofu mix onto the pan.



Next, sprinkle 1/2 of the spinach onto the pan, then pour on 1/3 of the cheese sauce.

 


Now, add another layer of noodles, and another layer of tomato sauce.

 


Add the other half of the ricotta cheese followed by the other half of the spinach.

 


Next comes another layer of noodles, and then another layer of vegan cheese sauce.

 


Next comes the last layer of noodles, then the last layer of cheese sauce (And if it happens to be someone's birthday, you can make the last layer a bit decorative!). Make sure you have enough sauce on top so you don't see the noodles (as you CAN see in my picture), otherwise it will dry out.

 


Note: The tin foil is to keep the lasagna from drying out, and it is in the shape of a tent so that the foil doesn't touch the sauce. Make sure that it is closed down on all sides so that the sauce won't dry out (as mine did). Next, place it in the oven for 90 minutes on 375 degreess. For a side dish, cook some green beans with a few cloves of garlic, and add some garlic bread. This makes a wonderful full meal! Enjoy!
